New Tandoori Cafe is one of the few restaurants in the Bay Area that still cooks with a Tandoori Oven.

The word "tandoori" comes from the Hindi word "tandoor," which means "clay oven", typically shaped in a large, cylindrical vessel. The tandoor is heated with charcoal or wood fire until it reaches a temperature of around 400-500 degrees Fahrenheit.

This popular cooking technique has been used in Central Asia and Persia for centuries, giving that smoky, charred flavor to dishes that everyone loves.
